Grain-Free Blueberry Pancakes
Sometimes you create a great recipe, and sometimes you just find it. I usually post original recipes; but in this case I am posting a recipe that I have adapted to our liking. We have tried many different pancake recipes and this is by far our favorite!
Serves 4-6
Ingredients:
4 Scoops PurePaleo Vanilla
2 tbsp. of Golden flaxseeds, freshly ground*
¾ c. Coconut flour, sifted (I buy it here in bulk)
½ tsp. Baking powder
1 tsp. Sea salt
1 tsp. Stevia powder
2 c. Raw whole milk or coconut milk
8 tbsp. Butter, melted
2 tsp. Vanilla
Fresh organic blueberries
Cinnamon (I love Vietnamese Cinnamon)
Lard or bacon grease
Directions:
Grind flax seeds in a coffee grinder until they become a powder. Put all ingredients in blender. Warm skillet to a medium-low temp. Prepare the skillet with a small amount of lard or tallow. Ladle the batter onto your skillet and place 3-4 blueberries on top with a generous sprinkling of cinnamon. Let cook until you see bubbles come through the batter and the pancake is slightly browned on the bottom. Flip over. Butter generously and top with more fresh blueberries or maple syrup.
*It is a good practice to buy whole flax seeds and grind them only as needed. Grinding releases the healthy fats found in flax seeds for easier assimilation, but it will also cause them to oxidize faster. This oxidization can give flax a rancid smell and taste. If you do have any ground flax leftover, it is best to seal it in a airtight container and keep it in the freezer.
